Whisky ownership at its most intimate

At The New Zealand Whisky Collection, we craft our Single Malt whisky from Otago-grown barley, distilled in Dunedin, and matured in the cool, salt-laced air of Oamaru's historic harbour district.

Our Private Cask Programme offers whisky lovers the rare opportunity to go beyond simply buying a bottle — you become part of the whisky's story. From choosing your cask style to attending the filling, visiting your maturing spirit, and designing your own personalised label, this is an ownership experience like no other.

The Grain & The Spirit

From the soil of Ngapara

We are currently distilling new make spirit from barley grown by Richard and Paige Wills at their farm, Black Point, in Ngapara — just 20 minutes from Oamaru.

Black Point's rich microclimate and limestone bedrock soils make it exceptionally well-suited to premium barley. Combined with the cool, salt-laced air of the Oamaru harbour district, the conditions are ideal for a whisky of genuine character and provenance.

Re-coopered American Oak or French Oak sourced from Launceston Distillery, Tasmania — previously holding ex-Bourbon, ex-Tawny, or ex-Apera. Some casks have also previously aged peated whisky. Shaved, re-toasted, and charred by Transwood Cooperage to enable full oak extraction and flavour development.

First-fill American Oak sourced from Journeyman Distillery, USA — authentic ex-Bourbon, ex-Rye, or ex-Wheat barrels. US bourbon law prevents reuse, so these arrive as genuine first-fill casks with uncompromised maturation history.

The Process

From enquiry to cask

  1. 01

    Get in touch

    Let us know which cask interests you, ask any questions you have, and we’ll walk you through availability and next steps.

  2. 02

    Sign the contract

    We’ll send through an order form outlining your cask type, preferences, and payment options.

  3. 03

    Invoice and payment

    Once we receive your order form, we’ll issue your invoice. Payment confirms your cask.

  4. 04

    Filling day

    Your cask is filled with fresh new make spirit. Attend in person, join via video, or we’ll send photos. You’ll receive your Cask Certificate with fill date and cask number.

  5. 05

    Maturation begins

    Your whisky rests in our historic Oamaru bond store. You’re welcome to visit your cask by appointment throughout the aging process.

Each cask begins with a moment — spirit flowing from still to oak, witnessed by you. Many of our owners travel to Oamaru for filling day, joining us in the bond store as their whisky starts its journey.
