Our Heritage

The Revival of New Zealand Whisky

New Zealand whisky has a story older than most people know. Before the temperance movement silenced Dunedin’s distilleries in the early twentieth century, the South Island was producing some of the most characterful single malt in the southern hemisphere.

We have spent decades rescuing, preserving, and now reimagining that legacy. The New Zealand Whisky Collection is both an act of historical reclamation and a vision for what New Zealand whisky can become — internationally respected, deeply local, and unmistakably itself.

What Makes it Extraordinary

Provenance

Born of the South

Otago speaks through every drop. The pure alpine air, the schist-filtered water, the dramatic temperature swings between season — this is whisky shaped by a place like no other on earth.

Cask Influence

Time in Oak

Matured in first-fill American oak ex-bourbon casks, then finished in North Otago Pinot Noir barrels. The local red wine casks bring cherry, red fruit, and a depth of colour that makes our whisky unmistakably New Zealand.

Maturation

Seaside in Oamaru.

Every cask rests in our historic bond store on the Oamaru harbour, metres from the Pacific. The cool, salt-laced air penetrates the oak slowly — imparting a coastal minerality that no inland distillery could replicate. It's the one thing we can't rush and wouldn't want to.
